We had a huge garden, large yard (1/2 junior acre) with 14 fruit trees, and relatives raising beef and pork. Good luck in meeting your challenges. We are now only 2, living on 3 1/2 aces and my husband just built a small sun house, which extends our growing season, here, in Colton, OR.<BR/><BR/>I have frozen whole tomatoes and unwashed blueberries quite successfully. You can always afford a freezer, even if you have to pay interest on monthly payments to buy it. I will take you up on the eat local challenge for at least 3 meals a week! I have to admit it is easier with a large garden in my backyard and a brother who raises organic birds. I will be allowing my starch staples (rice, pasta and polenta)from elsewhere - since I can't grow them, but my spelt is local and the potatoes too. How do you feel about spices from afar?
